Demand for food is growing rapidly, and consumer expectations are ever-changing. This transition often brings high-calorie diets that may give rise to health issues.

UMR Qualisud addresses global food security issues by promoting sustainable food systems that support the transition to more balanced consumption patterns and consolidate agrifood systems in southern countries.

Along with its partners in the South, the unit takes an integrated approach in its research on the development and preservation of food products. It conducts studies aimed at improving and optimizing the efficiency of local food resource processing techniques, taking account of the various aspects of food quality (sensorial, nutritional, safety and health benefits) throughout the processing stage. Overall, its approach is geared towards developing innovations and integrating products into value chains and markets.
