This book is the second in a set of two. It covers the post-harvest aspects of aquaculture, the pathogenic waste associated with seafood, and the management and recycling of fish and shellfish waste.
Chapter 1 covers strategies for control of bacterial infection in farmed aquatic organism products, such as the formation of bio-films, growth of micro-algae and bacteria-eating organisms, pre- and probiotics, biofilters, etc.
Chapter 2 describes the use of probiotics in larva culture.
Chapter 3 looks at the deterioration caused by the various bacteria associated with fresh, preserved or processed fish and shrimps.
Chapter 4 covers seafood diseases and consumer perceptions of seafood safety and quality.
Chapter 5 describes the available conventional and molecular techniques for detecting and counting human infections and toxin-producing bacteria, which are naturally linked to marine environments.
Chapter 6 gives an insight into the different types of fish sauces and fermented pastes available worldwide, with the emphasis on production processes, microbiology and composition.
Chapter 7 concentrates on the potential of micro-algae, corals and other micro-organisms as useful neutraceutical sources. Micro-algae have industrial uses as a raw material to make carotenoids, vitamins and fatty acid supplements, and as food additives for poultry, cattle, fish and shellfish. Similarly, corals supply numerous bioactive compounds, such as hormones, antibiotics and pharmaceuticals.
The last three chapters of the volume deal with waste from the fish industry and by-product management: microbial remediation of fish and shrimp farms, fish industry waste management, with particular emphasis on the use of micro-organisms, fish hydrolysis by microbial fermentation and by protease application with a view to recovering added value in the form of enzymes, carotenoids, polyunsaturated fatty acids, etc.
