Vanilla

27/07/2010 - Article

A new reference book on vanilla is just out. It will allow readers to discover the latest results of research on this aromatic orchid.

There are 24 chapters in the book Vanilla, written by 45 international specialists from twelve countries. They provide comprehensive coverage of vanilla genetic resources, cropping practices and pest and disease control. The book explores the relationship between vanilla pod development and synthesis of the aromatic compounds that determine its quality.

The various vanilla supply chains are described, particularly those in emerging countries such as China and India, and East African countries (Uganda and Congo). Two chapters look more specifically at vanilla production in French Polynesia, and another two at Réunion.
This is the first such globally relevant book since Le Vanillier et la Vanille dans le Monde de Gilbert Bouriquet (Editions Paul Lechevallier, 1954).

Michel Grisoni is a virologist at CIRAD, with the Plant Communities and Biological Invaders in Tropical Environments Joint Research Unit, based in Réunion.

Éric Odoux is a food science biochemist at CIRAD, with the Integrated Approach to Food Quality Joint Research Unit, based in Montpellier.

An electronic version is also available on line.
