Local agrifood systems (LAS) seen from a novel angle: the relations between technical change and territorial anchorage of production operations.
Certain local agrifood systems (LAS) seem both to be a response to the current wave of globalization and to open up possibilities of confronting the issues of (more) sustainable development. In effect, they are part of a local socioeconomic dynamic, make use of natural resources while also preserving them, or offer products with a high "cultural density". How did LAS acquire those properties?... a vast question that this book looks at from the novel angle of the relations between technical change and territorial anchorage of production operations.
From the development of the Aubrac cattle race in the 1960s to the questions asked about the technical models adopted for vegetable production in the Pyrénées-Orientales, through the revival of saffron production in Quercy, the qualification of Corsican cheeses or of the Cotija cheese produced by Mexican rancheros, the authors analyse the numerous experiments that have laid the foundations for possible future methods.
The book is intended for researchers and teaching staff as well as political or associative leaders, territorial facilitators and development staff.
