This publication presents the stages of mango processing, from fruit supply to marketing the dried product. There is a detailed analysis of each operation: theoretical principles, equipment used, good practices of use and hygiene, quality control, output in “matter” and energy consumption, labour requirements, etc.

In addition to the technical files in the guide, the reader will find a diagram of a mango drying unit, plans for making a ventilated dryer, as well as a useful production manual for the preparation, monitoring and analysis of a drying campaign.

The guide is aimed at managers of small and medium-sized businesses, seeking to improve the operational conditions of their production units, as well as for entrepreneurs and project supervisors who want to set up a mango-drying unit.
